Grapes

 A selection of the best Crus of Italy, from the best growing areas, selected according to their propensity to a very long aging.

As soon as the pomace arrives at the distillery it is treated and preserved with Grappasystem®, a system created for controlled fermentation through the addition of selected oenological yeasts.

Grappasystem® also ensures that the pomace is preserved in an ideal, healthy, oxygen-free environment at the right PH inside a tunnel of plastic food film under

high pressure.

This is the secret for keeping the aromas of the pomace intact in a completely natural way for up to several weeks.

 

Distillation

The distillation takes place in traditional stills and in technologically advanced plants in order to obtain the maximum aromatic finesse on the palate.

Each grape is distilled separately. At the time of the preparation for blend for aging, the three distilled grapes (grappas) are skilfully blended.

 

Ageing

The final blend rests for 7 years in barrels (3 years cherrywood and 4 years in oakwood), some of them use to contain Marsala and Passito wines or Brandy, to enrich the aromatic and spiced notes.

 

Sensory features

A complex Grappa characterized by notes of cherry and red fruits, with intense hints of leather and tobacco, vanilla and dried fruit.

 

Serving suggestions

To fully appreciate taste it in “Bolla” glasses at a temperature of 18-20, accompanied by dark chocolate with a high percentage of cocoa or by a good cigar.
